ROASTED BROCCOLINI WITH LEMON + PARMESAN
Want a side dish that really impresses? Then look no further than these Roasted Broccolini with Lemon + Parmesan. The perfect combination of crispy, salty + zingy. They really do pair well with any dish. And that rustic look… I mean pure perfection!
This would have to be one of my favourite side dishes. The broccolini comes out both tender and crispy. It is so quick and easy to prepare, it’s almost not a recipe. Yet these kind of recipes do seem to be some of my most popular!
Most people will have never tried to roast broccolini before. So even if this small change expands your culinary horizon, I will consider it well worth it. Like I always say with roasting, it gives the vegetables a really yummy sweetness that you don’t taste when you steam or pan fry them. Even a vegetable like this, which is not known for it’s sweetness, has that hint of caramelisation with the crispiness of the flowerettes.
And tell me there isn’t a more perfection, yet simple, combination of lemon + parmesan. The sharpness of the cheese with the zing from the lemon really does go together like peas and carrots (any Forest Gump watchers will understand this comparison).
It is this combination of flavours that really allows this side dish to be paired with the meat/fish of your choice or anything else on your plate for that matter.
This also supports a cooking truth that I will always stand by.
A little burnt is not necessarily a bad thing.
For these Roasted Broccolini with Lemon + Parmesan I would argue that slightly burnt is the only way. The amazing crunch you get from the delicate tips and thin leaves is what makes this a sensory delight. The entire stalk won’t be crunchy, just the tips of the florets and the leaves, which makes for a lovely textural contrast.

What Do I Need?
- 1 -2 bunches of Broccolini
- 1 lemon, sliced
- 2-3 Tablespoons of Fresh Parmesan Cheese, grated (see note)
- 2 Tablespoons of Extra Virgin Olive Oil
- Salt + Pepper
Let’s Do This!
1. Preheat oven to 200c
2. Remove the ends from the ends of Broccolini.
3. Arrange in a single layer on a baking tray.
4. Pour over the Extra Virgin Olive Oil and toss. Season with salt + pepper
5. Place lemon slices on tray + sprinkle over the parmesan.
6. Roast in oven for 15-20mins – until the ends are a little burnt!
7. Serve whilst it is still warm and make sure you scrape the pan for all the melted parmesan goodness.
NOTE: You will often find Parmesan as Parmigiano-Reggiano
