This Banana Cream Pie Chia Pudding is loaded with banana and coconut flavour. So indulgent, so delicious it will feel like dessert for breakfast. In fact you can have this Chia Pudding for dessert or a snack as well as breakfast.

If you have ever had a Banana Cream Pie they are loaded with banana and custard and topped with cream. So fluffy, so creamy.

This take on a Banana Cream Pie comes packed full of nutrients thanks to the bananas, chia seeds and coconut. It’s super easy to put together and makes a great choice when you need to food prep or have a breakfast which is portable.

Bananas are often known for their postassium but they are also a great source of Vitamin B6. This vitamin is often depleted with the pill, yet is so needed for brain and nervous system function. Specifically the body needs Vitamin B6 to help make seratonin – our happy hormone, and norepinephrine – which helps your body cope with stress. Vitamin B6 also helps the body make melatonin, which helps the body regulate sleep.

Another little known benefit of bananas are their fibre content. And depending on their level of ripeness (the more un-ripe they are) bananas are also a great source of resistant starch, which helps feed our good bacteria in our large intestines. If you are battling with blood sugar control or insulin resistance I would suggest having them more on the unripe than ripe side.

The Chia seeds are also high in fibre, coupled with high in Omega-3 fatty acids. This is needed to help reduce inflammation.

For my females I highly recommend this in the week leading up to your period. During this phase of our menstrual cycle our digestion loves something easily digestible and the fibre content can help our ensure that our food is moving through our potentially sluggish digestive system. The omega-3’s will help reduce the inflammation that is present with the lead up to our period. When our body produces enough seratonin we also have a better tolerance to pain. And quite frankly it just takes yummy and indulgent – the perfect combination when a little treat is wanted. This is all round a winner.

What do I need? 
  • 1/4 cup Chia Seeds
  • 1/2 cup full-fat Coconut Milk (tinned)
  • 1/2 cup Almond Milk
  • 1 tablespoon Maple Syrup or Raw Honey
  • 1 Banana, mashed
  • 1/4 cup of Walnuts, chopped
  • 1/4 cup of Almond, chopped
  • 1 Banana, chopped (to top)
  • Coconut flakes (to top)

 

Let’s Do This!

1.Combine the chia seeds, coconut milk, almond milk, maple syrup or honey in a bowl and whisk until well combined. Add in mashed banana

2. Cover the bowl and place it in the fridge for 1 hour to firm up

3. Divide the nuts into 2 cups, add 1/2 of the  chia pudding mixture to the cups and top with chopped bananas and coconut chips.
