It is so easy and enjoyable to bring a little freshness to your breakfast. And these Pesto Scrambled Eggs with Wilted Greens do just that. The softness of the egg, the flavourburst from the pesto and the freshness of the greens, this breakfast is fast becoming one of my favourites.
My must haves for a great breakfast are
– A serve of protein. Now this is equivalent to 15-25g. And not something you can get from a bowl of cereal… Eggs are a lovely way to boost up the protein content of your breakfast
– A serve of healthy fat. To control blood sugar, help you stay fuller for longer and have a nice steady energy output this is a must! Pesto ticks off this requirement for us
And for the bonus – veggies!! Getting some veggies into breakfast really does make the body sing!

Many store bought Pesto’s are made with crappy vegetable oils as their bases. Not only is this not as tasty as Extra Virgin Olive Oil, these oils can actually detract from our health rather than adding to it.
Pesto is super quick to make and I have a recipe for you here. This one has options for those who are avoiding dairy or who maybe a little reactive to garlic.
Fragrant Pesto Scrambled Eggs with pan fried greens Now, what’s not to love about this breakfast recipe?
What do I need?
- 5 medium Eggs
- 1 Tablespoon of Butter or Coconut Oil
- 1 Tablespoon of Pesto
- Salt + Pepper to taste
Greens
- 1 Tablespoon of Coconut Oil
- 3 cups of Mixed Greens eg: Kale, Spinach, Chard
- Salt + Pepper to taste
Let’s Do This!
1. Crack your eggs into a bowl, add your salt + pepper then whisk togethers
2. For the greens: In a large fry pan heat the coconut oil over medium heat.
3. Add your greens to the pan and cook until tender, tossing occasionally.
4. For the eggs: Heat a small to medium pan over low heat and add butter/coconut oil
5. Once it’s melted add in the eggs. Stir slowly using a woodend spoon or spatula, bring in all the mixture from the edges of the pan.
6. When you eggs are almost done, add in your Pesto and contine to mix.
7. Your eggs are ready when they are slightly runny. They will continue to cook a little even after you’ve removed them from the heat.
