A nice light ‘rice’ salad that is wonderfully easy to prepare. The flavours in the dish make it a wonderful accompaniment to any meat, fish or tofu. It is also tasty by itself.

This is one salad where adding the dressing on early actually makes it taste better as they flavours really come alive when it has sat for a little bit.

This can also be heated.

 

Asian Rice Salad low carb

What do I need?
  • Head of a small Cauliflower

  • 1 Carrot, grated

  • 100g Snow Peas, sliced

  • Handful of Coriander and Mint, chopped

Dressing

  • 1 Tablespoon Tamari

  • 1 Tablespoon Rice Wine Vinegar

  • 1 Tablespoon Olive Oil

  • 1 teaspoon Sesame Oil

  • 1 1/2 teaspoon Honey

  • 1 Garlic Clove, crushed

  • 1 tteaspoon Ginger, grated

  • 1 Red Chilli, finely chopped

 

Let’s Do This!

1. Chop your cauliflower into rough pieces and place in a food processor. Process until the cauliflower has the appearance of rice. This can also be done on a grater.

2. Add your ‘rice’, carrot, snow peas, mint and coriander to a large bowl. Toss all ingredients together.

3. Place all the dressing ingredients in a small bowl and whisk until combined. Make sure you have all of your honey combined.

4. Drizzle the dressing over the salad and mix well.
