Pancake Day aka Shrove Tuesday is one of my favourite days of the year and these Double Choc Figgy Pancakes are the perfect indulgent but guilt free pancake.

It came about as it is the day before the beginning of Lent (a Christian period of which you give penance), pancakes were made to use up all of the indulgent foods within the house – eggs, butter, milk etc.

Coming from a household with English heritage, from as far back as I can remember we ate Pancakes – sweet and savoury – every year on this day. For me the tradition lies in the memories and feeling like a kid again!

Nowadays my pancakes do not contain any of those stated ‘indulgent’ foods above, they are actually good for you packed with good fats, wholefoods and plenty of taste!!


What do I need?
  • 2 eggs, whisked

  • 1 cup of Almond Meal

  • 1/4 cup Coconut Milk, canned

  • 1 tsp Cinnamon

  • 2 heaped tsp of Cacao Nibs (you can use 70% dark chocolate)

  • 1tsp Raw Honey

  • 1tsp of Vanilla Extract

  • 1 Tbl Coconut Oil


  • 1 Fig quartered

  • 1 Tbl Coconut Milk canned

  • 1 heaped tsp of Cacao Powder

  • 1 tsp Tahini

  • 1/2 tsp Raw Honey

  • 1 Tbl crushed Walnuts


Let’s Do This!

1. Place all of the pancake ingredients except the coconut oil into a bowl and whisk together. It should a similar consistency of regular pancakes.

2. Heat a small fry pan over medium heat with a little of the coconut oil.

3. Spoon 1/3rd of your pancake mixture into the pan, shaping as you go, the mixture would have thicken slightly by this stage.

4. Cook for 3-4 mins then carefully flip over for another 1-2 mins. Repeat until all of the batter has been used.

5. For the topping: Combine the coconut milk, cacao powder, tahini and honey in a small dish to form a thick chocolate sauce.

6. Stack your pancakes on a plate, top with the fig, the chocolate sauce and walnuts. Enjoy!!

Makes 3 pancakes

You can drizzle with a little maple syrup if you wish for a sweeter pancake or fry your figs in a little coconut oil.
